Spinach and Tomato Pasta



I have really been enjoying meatless meals. Over the past few years, my desire for meat has dwindled. This pasta dish hit the spot and I didn't miss meat at all. 

What you'll need

  • 1 tbsp basil

  • 1 tbsp oregano

  • 1 tbsp minced garlic

  • 3 cups of spinach

  • 1/2 tsp sea salt

  • 2 tbsp of tomato paste

  • 1 white onion

  • 1/2 cup of fresh sliced cherry tomatoes

  • 1 tbsp of avocado oil

  • 1/4 cup of white cooking wine

  • 1/2lb of pasta

  • 1/2 cup of water

Directions

Boil your pasta. While it's boiling, use a large pan to heat oil, tomatoes, onion and garlic until tomatoes are soft. Then add white wine, basil, oregano, sea salt and tomato paste and let simmer for 3-5 minutes. Add water and spinach and allow the spinach to wilt. 

Then toss in your pasta and enjoy!
